Spectacular Day at Genting Highlands

Wednesday, June 13, 2018
We departed boarding relatively early ready for a whole house boarding trip up to the Genting Highlands. When we arrived, we took the Awana Skyway up to first stop ‘Chin Swee Station’ and explored the Chin Swee Caves Temple and other interesting statues. This was really enjoyable for all, with some of the boarders even climbing the steep levels to reach the very top of the temple to get a fantastic panoramic view.

We then jumped back on the gondola ready to go up the mountain to the top and there were a few screams as we ascended highly and quickly up the mountain with views of the 130 -million-year old rainforest below; the weather was amazing and the views were phenomenal as you could see for miles in every direction. Once we reached the very top we were able to get some lunch before descending to the bottom where the boarders enjoyed some outlet shopping.

In this week’s breakfast club with Mr Dan, we made Filo Egg Cups with a Spicy Tomato Fresh Salsa. This simple, yet highly versatile recipe, makes a delicious brunch option. The cups work equally well with both filo and shortcrust pastry or even without the pastry for a healthier spin, we used filo for this recipe and I provided a few options for tasty fillings but we went with spinach, sundried tomatoes and roasted peppers. A spicy tomato salsa is the perfect accompaniment to keep it fresh and add a little zing. The boarders can easily modify the recipe learnt to make a quick and easy delicious breakfast.

We layer a muffin tray with squares of filo pastry and melted butter before baking the pastry cups for 10 minutes, we then add the filling and crack an egg on top and bake for a further 5-10 minutes until the egg is cooked through but still retains a runny yolk. We chopped all of the fresh salsa ingredients up and brought them together with a splash of extra virgin olive oil and some lemon juice. A simple but delicious breakfast that packs a tasty punch!

Year 10 Mid Course Exams
Our Year 10’s have been busy last week sitting their mid course IGCSE examinations. The exam results will provide a valuable insight of what improvements need made as they enter in to the all important Year 11 stage of their academics. Teachers will also give feedback on what the learners should be revising over the summer holiday break.
